First-I have a few new photos from my apartment…
Second- I am liking Missouri a lot better now that it isn’t so crazy hot and humid! It is turning into a lovely fall with super nice weather…and again…more trees than Nebraska! Fall is such a great time of year!
Third- I made a new recipe for dinner……It was a dish with Black beans, rice and zucchini!
1.Heat oil in large skillet over medium heat. Add minced garlic, chopped (chunks) onion, medium- sliced and quartered zucchini and diced bell pepper; cook 5 minutes, stirring occasionally. Add black beans, undrained tomatoes and water. Increase heat and bring to a boil.
2.Add rice; stir well. Cover; simmer for 15 minutes or until most liquid is absorbed and rice is cooked (not hard). Sprinkle with cheese, cilantro and serve. On each serving, place half of an avacado cut & cubed.
It was delicious!
Fourth- I have listened to the song “No Not One” by Brandon Heath like 10 times today, and I recommend that you listen to it! I would put the link on here, but I can’t get to youtube…..But, it is just a great song reminding me that God’s Love is more than enough, it is completely sufficient, that it brings hope, satisfaction, a reason to live, etc.
Fifth- Tonight I went to a presentation that was being done here at school called “Into the Buddhist Mind” exploring what it is like to minister to Buddhists and the barriers and obstacles of sharing Christ with them. It was super challenging and sad to see how their religion is so hopeless. The world needs Christ!
Sixth- Our lives are a vapor…..let’s use them for eternity!
